Disney made an official statement that their Star Wars: Galactic Starcruiser will be having its final voyage on September 28th of 2023. The hotel/experience opened just over a year ago in March of 2022, making this hotel one of Disney's shortest-lived experiences. Below is the official statement Disney released to press outlets.
“Star Wars: Galactic Starcruiser is one of our most creative projects ever and has been praised by our guests and recognized for setting a new bar for innovation and immersive entertainment. This premium boutique experience gave us the opportunity to try new things on a smaller scale of 100 rooms, and as we prepare for its final voyage, we will take what we’ve learned to create future experiences that can reach more of our guests and fans.”

Signs Galactic Starcruiser was Closing
Last year Disney started showing signs that the experience was struggling to meet the expectations they had for it. Late in 2022, it began to operate only one dinner vs. the two it was intended to have. This meant that the sailings were only filling to half or possibly even less.
The cut of dining options was quickly followed by completely cutting some dates out altogether. Most notably in July and August numerous dates were not an option to set sail on the Starcruiser.

Earlier this year many of the original cast members that played key story characters made announcements on their social media that they were sadly having to leave the Galactic Starcruiser. While not stating the exact circumstances around it, several of them made it sound as though it wasn't their choice to leave.
Lastly, just in the last couple of months, Disney was allowing up to 30% off discounts for the experience! It is said that sadly those discounts are no longer going to be available for booking these final sailing dates.
Booking a Final Voyage on Star Wars Galactic Starcruiser

If you are currently booked on a voyage on or after September 30 be on the lookout for a call from Disney to discuss your options. These guests are getting the first pick to modify their plans before Disney will resume sales of its final Galactic Starcruiser sailings.
New bookings for any remaining reservations between now and the final run starting on September 28 are on pause. They will reopen on Friday, May 26, Disney said.
