If you’re a cookie monster a stop at Gideon’s Bakehouse at Disney Springs is a must-do. I highly recommend going and getting in their virtual queue before noon. The cookies go quick and the line does completely fill up before Disney Springs closes so this is not a stop to sleep on.

Gideon’s Backstory

Did you know that Gideon’s is a locally owned small business that started here in Orlando Florida? Gideon’s original location opened in late 2016 at Orlando’s East End Market with one employee and an $800 budget. The Bakehouse quickly gained international recognition for its almost ½-pound, small-batch handmade cookies. Word quickly spread, and lines up to 80 minutes long became a regular sight. Now locals and visitors alike all line up hoping to get their hands on their favorite flavor before Gideon’s sold out.

How the Virtual Queue Works

When we say the line gets long at Gideon’s Bakehouse, we aren’t joking. The line here on some days gets up to 6 hours long. Often times they can no longer accept new people to the virtual around 6 pm at night. This bakery draws similar large crowds to its orginial location in Orlando so it’s no surprise it’s even crazie at this new Flagship store in Disney Springs.

To join the virtual queue you will want to head to the entrance of Gideon’s Bakehouse. When looking at the front door the signups to the line will be on the right, you should see a sign for virtual queue signups, follow those. Once you reach the friendly employee with an iPad the signup is as simple as giving them your phone number along with the size of your party.

Then you will receive two text messages. The first is confirming you are on the list along with an estimated wait time. The second text message is to alert you it’s your time to return to Gideons and get your cookies!

Once you have been notified to return you head to the queue that starts to the left of the main door into Gideon’s. You will see another person with an iPad as well as a queue line with lots of people in it, you can’t miss it. From here I would say we typically wait less than 10 minutes to get inside and place our order.

A Tour Around Gideon’s Bakehouse

Inside this bakehouse, you may find it hauntingly similar to a certain mansion located over at the Magic Kingdom. Inside is a whimsical Victorian design and it’s packed with so many details it hard to catch them all in just one trip.

The outside gives you an old vintage vibe and also features lots of hits on the best menu items that await you inside of the bakery.

Inside if you can take in all the art and artifacts that cover the walls. It gives off all the steampunk vibes and I am sure there are tons of little hidden treasures to find along with all these pieces.

Now let’s look at the cookie case, on the back wall just before you get to the ordering counter you will pass a cookie case. This is a perfect chance to get an up-close in-person look at the cookies before you order.

I was most surprised and amazed by the fun fire detail that they have at checkout. Don’t worry no cookies were harmed in this magical fire.

Original Chocolate Chip

This is the cookie that started it all. The Gideon’s Original Chocolate Chip is the foundation, the first child.  This recipe took 15 years to perfect and is filled with history.  It is packed inside and out with a variety of Chocolates, infused with differing vanillas, and has a texture that might almost trick you into thinking you’re eating Cookie Dough. This Cookie has been named everything from Best in Orlando to Best on Planet Earth and we couldn’t be prouder to hand make it from scratch for you daily.

Peanut Butter Espresso

A creamy Peanut Butter mixed with freshly ground 431 blend Espresso from the award-winning Lineage Coffee. Topped with chocolate and our small batch of house-made candied peanuts for the perfect amount of crunch with your cookie. So unique! So Flavorful!!

Gideons dubs this as the Cult Cookie. People who love it want everyone else to obsess over it along with them. Why?  It’s like a Cookies & Cream milkshake in a cookie.  It starts with our ultra-soft vanilla bean cookie filled with chunks of hand-cut Double Stuff. We top it with a complete covering over crushed cookies to solidify Cookies & Cream in a way you’ve never experienced.  Not the prettiest but so sweet and tasty.

Coffee Cake Cookie

I think this cookie has been my favorite so far. It’s so fresh and the perfect afternoon pick me up. This cookie was previously only available one month a year in the original location now it’s available every morning at Gideon’s in Disney Springs.

The glory that is Gideon’s Coffee Cake Cookie is an extra Buttery Vanilla Bean Cookie filled with Cinnamon Strudel and topped with our Homemade Double Baked Butter Crumbs! Buttery. Crunchy. Extraordinary. Built to be paired with the Gideon’s Ginger Snap Cold Brew. I thought it was similar on the inside to a gooey cinnamon roll, which is pretty much my favorite!

Dark Coffee Cake

The Dark Coffee Cake Cookie is a Gideon’s Coffee Cake Cookie with a chocolate cookie base. The chocolate cookie almost tasted like a brownie.

Like his ambassador, Signora Pipistrello, the Dark Coffee Cake Cookie can only come out after dark and will be yours for the taking every evening strictly at Sunset until Sell Out! Ask your smartphone the time for Sunset, and Pipistrello’s Cookie will be waiting. This cookie is exclusive to the Disney Springs location.

Frankenstein Cookie

Frankenstein appears this year with his Bride, bringing you two Limited Edition Cookies for October! With Frankenstein, you get a Cookie stitched together with various Chocolates, Double Stuff Oreos, and M&M’s to resurrect our most popular Limited Edition Cookie of the year. The new Bride Cookie brings a design from the same mold as Frank but featuring White Chocolate, Golden Oreos, and M&M’s! ⁣⁣

The Banana Bread Chocolate Chip Cookie is a title that says it all! Enjoy a decadent Vanilla Bean Cookie infused with Bananas found in the lost jungles of Southeast Asia by adventurer, explorer and scientist, Dr. Tobias Brimstone (who looks like a famous Disney Imagineer). We’ve mixed this flavorful gift with our favorite blend of Chocolates, Candied Walnuts, and finely crushed Banana Chips!

This one is a Disney Springs exclusive. It’s no secret that we’re a little Buttercream obsessed, so we’ve created a line of Double Frosted Cakes! That’s right! 3 Layer Cakes covered in two complementary layers of Buttercream. Maybe the greatest thing ever in the history of ever.  Flavors rotate throughout the week. The one pictured above is a chocolate cake with peanut butter frosting. If you are a peanut butter cup lover this cake is definitely one for trying.

This should definitely not be the last on this list because the cold brew was the biggest surprise win of every trip to Gideon’s. I don’t even love peanut butter it’s just not my favorite thing, and this coffee I LOVED. So really I recommend this one for everyone.

This is delicious and available for a Limited Time only (October) at the Disney Springs location. Like all Cold Brew offerings, you won’t find any store-bought chemical-filled syrups in our house! You get real Cinnamon, Ginger, Cardamon, White Pepper, Nutmeg, Cloves, and locally roasted @lineagecoffeeroasting bean!⁣⁣

Limited Edition Banana Nitro Cold Brew

As you know, our Cold Brew is made from locally roasted Lineage bean and real food, not store-bought syrups, so this magical elixir is created from the special Bananas Dr. Brimstone has brought to us. They are said to hold unique properties that bring good fortune to all who experience its flavor. 

We thought the banana taste was hard to spot in this one it was very very subtle. This is also the strongest coffee flavor of cold brew we have had to date. It packed a little coffee punch with every sip.

Hot Cookie Hour

A new magical addition to Gideon bakehouse is Hot Cookie Hour! You will have to time things just right in order to get to try this treat. Hot Cookie Hour is available from 2 – 3 PM and 7 – 8 PM! Get a Chocolate Chip Cookie straight from the oven with a scoop of locally made Malted Vanilla Ice Cream! It’s magical and yes they taste even better fresh out of the oven. I recommend going during a weekday as it’s easier to time this then.

Are Gideon’s Cookies Worth It?

Absolutely! This is right up there with the other legendary Disney World treats. I love that this small business found a second home here at Disney Springs. While the chocolate chip is a classic I urge you to taste some of the other flavors as those have been more of our favorites.
