4 Rivers Cantina Barbacoa Food Truck is a food truck in Disney Springs at Walt Disney World. This isn’t the first food truck to land in Disney Springs but it is the first non-Disney food truck to arrive. There is a local BBQ restaurant called 4 Rivers Smokehouse that is wildly popular who is behind this food truck gold mine. You will find this food truck parked right next to the World of Disney store at Disney Springs. If you don’t know where that is, it’s also in front of Basin and next to Ghirardelli.

4 Rivers Cantina Barbacoa Food Truck Tables

There are brightly color tables places out front of the food truck. It’s important we note for our warmer month travelers there are no chairs, no umbrellas, no guaranteed shade. When we stopped in for an early dinner we were happy to find the World of Disney was providing the shade. As the seasons and sun location changes, I am sure this could change though.

If you are looking for shade, we got rained on as we received our food and were quickly able to make it over to the outdoor seating at Ghirardelli and get a covered table so we could enjoy our dinner.

The menu for 4 Rivers Cantina Barbacoa Food Truck is much like the one you find at Chipotle. First, you pick your protein: Brisket, Chicken, Pork, Steak or Black Beans and Rice. Then you can go ahead and pick how you want you mean served up, tacos, nachos, burritos, etc. Dishes are topped with your standard pico de gallo, queso fresco, cilantro, jalapeno, salsa verde. I loved that some dishes even included guacamole, my personal favorite topping.

4 Rivers Taco Cone

Of course, we need to start with the star of the menu at 4 Rivers Cantina Barbacoa Food Truck, the Taco Cone! This item is huge, I really don’t think the pictures we have above and below do it justice. My husband and I could have easily split this item instead of ordering our own items.

You may be wondering how is that no going to start getting soggy and drip all over everything. Well, 4 Rivers thinks of everything. There is an insert in the bottom of the cone that collects the juices and keeps your mess to a minimum.

4 Rivers Chicken Nachos

The nacho lover that I am I went with the chicken nachos. I really enjoyed this dish it had me at two scoops of guacamole. Even though I opted out of jalapenos it still had a good heat to it if you are a spicy food lover. I typically hate all things spicy but I enjoyed this it took me right to the edge of what I enjoyed and was still full of flavors. I am curious to try other meats and see what their “heat” level is.

Brisket Barbacoa Tacos

Update! We went back already! I tried the brisket and loved it! It has a smokey flavor with some mexican spice bleded in. Whatever the sauce was on this was the perfect blend of tastes. It was almost like a sour cream based sauce.

Chicken Quesadilla

This is a look at the chicken quesadilla. It’s pretty basic and just cheese and chicken which is how I like mine. However my husband wanted more toppings. They serve a pico on the side but he wished they put it right on top before they grilled it.

We had to try the famed churro balls which to me wasn’t as exciting as I had hoped. The churros themselves are nothing exciting and I even thought they were a litte overcooked. The sauce is good but I don’t know that I will be rushing back here for dessert. It was just kinda like a creamy icing.

4 Rivers Cantina Barbacoa Food Truck Review Recommendation

If you are a 4 Rivers fan already you have to come to check out their food truck. The meat has a lot of flavors reminiscent of what makes their BBQ joint oh so famous! If you love Mexicas food, food in cones then this stop is also the right one for you.

Like I mentioned before if you hate eating outside, without ac, in the Florida heat you may want to skip. Or you can opt to get creative like us and get your food to go and find a shady spot with tables to eat.

Another side note if you are familiar with 4 Rivers you will know that they are closed on Sundays. However, this is not the case for the food truck it WILL be open on Sundays at Disney Springs. It was nice to find out that the food truck’s sales from every Sunday will support The 4R Foundation. In 2017 the foundation funded more than 950 local schools, churches, and charitable organizations.
